Apple Cider Cupcakes

The beginning of this blog is happening in the Fall so sharing an Autumn-inspired recipe seems fitting for the very first post.



Apple Cider Cupcakes

makes 12 cupcakes


Cake

1 stick butter, softened

1 cup apple cider

1 cup sugar

1 tsp vanilla

1/2 tsp salt

1/2 cup applesauce

2 eggs

2 1/2 cup flour

2 tsp baking soda

1/2 tsp cinnamon


Frosting

1 stick butter, softened

3 cups powdered sugar

3-5 tbsp apple cider (depends on how you want the consistency)

1/4 tsp cinnamon

Pinch of salt


Preheat oven to 350 degrees F. Combine all of your cake ingredients and scoop into 12 prepared cupcake liners. Bake for 18-23 minutes or until a toothpick comes out clean after being inserted in the middle of one of the cupcakes. Let cool completely.


Combine the frosting ingredients and mix until smooth. Spread or pipe frosting onto the cupcakes. Optional: Sprinkle the tops with raw sugar.





* This recipe was edited to use softened butter instead of melted. The softened butter lends to a more tender cupcake.
